Storia, Caratteristiche e Proprietà della Regina della Bistecca
La carne Chianina è una delle più pregiate della penisola italica per la sua storia,
per l’origine delle sue caratteristiche e per il segreto della sua squisitezza. Tenetevi forte!
La Chianina risulta presente in Italia da più di 2500 anni.
Il bove Chianino era molto apprezzato già dagli Etruschi e dai Romani per il suo candido manto
(raffigurato nelle parate trionfali è presente in bassorilievi romani come nel celebre Arco di Tito – Foro Imperiale).
Il suo nome deriva dalla Val di Chiana, una valle dell’Italia centrale, ricompresa tra le province di Arezzo e Siena.
La Chianina è contraddistinta dal manto bianco porcellana, dalla pigmentazione nera del musello e della lingua.
La testa leggera ed elegante con corna brevi, tronco lungo e cilindrico con dorso e lombi larghi
lo contradistinguono come il bovino più grande del mondo.
Utilizzata un tempo soprattutto per il lavoro nei campi, è oggi considerata una delle più pregiate carni al mondo. Tra le razze tutelate dal consorzio, la Chianina è forse quella che gode oggi di un’immagine più nobile ed affermata, grazie anche alla fama mondiale conquistata con il mito gastronomico della “FIORENTINA”.
